To make artichoke crostini, you will need the following ingredients:
1 baguette, sliced into 1/2-inch rounds
1/4 cup olive oil
1 garlic clove, minced
1 (14-ounce) of artichoke hearts, drained and finely chopped
1/4 cup mayonnaise
1/4 cup grated Parmigiano Reggiano cheese
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh Basil
Salt and pepper, to taste
To make the crostini:
- Preheat your oven to 375°F (190°C).
- Place the baguette slices on a baking sheet and brush both sides with olive oil.
- Toast in the oven for 8-10 minutes or until lightly browned and crispy.
Meanwhile, in a small bowl, combine the minced garlic, chopped artichoke hearts, mayonnaise, Parmesan cheese, and parsley. Mix well. Season to taste with salt and pepper.
Spread a spoonful of the artichoke mixture onto each baguette slice. Place the crostini back in the oven and bake for 5-7 minutes or until the artichoke mixture is hot and bubbly.
