Norwegian Salmon Crudo

Sushi-grade raw salmon, sliced thin, on a bed of an Italian rustic fresh salsa of chopped basil, onions, capers, and heirloom tomatoes with a lemon olive oil vinaigrette, and finished with Italian micro-greens and sprouts.

Tasting Notes: Verdicchio, hailing from the Marche region, is celebrated for its high acidity and striking minerality, with aromatic notes of green apple, citrus, and a touch of almond. Its crispness and slight salinity make it a perfect companion for the Norwegian Salmon Crudo, enhancing the delicate flavors of the raw salmon and the fresh, zesty character of the salsa and lemon olive oil vinaigrette.

Whole Colorado Snapper

From Southern California, the whole fish is oven-roasted to a crisp and golden finish, with a mild, slightly sweet flavor and a moist and flaky texture. Paired with a refreshing Arugula salad, a blend of fennel, jalapeno, cherry tomatoes, red onion, and cilantro, lightly drizzled with a zesty citrus vinaigrette.

Napa Valley Lamb Chops

Pan-seared and drizzled with zesty Gremolata, resting on the side of oven-roasted peppers, onions, and baby potatoes sauteed with olive oil, garlic, and Italian herbs to a crisp caramelized finish.
